Each and every study which is used to claim that red meat is unhealthy does not differentiate between fresh meat and processed meat which is full of artificial conservatives like Nitrate.
A Harvard meta study which for the first time looked at processed and unprocessed meat separately said it all: Eating processed meats, but not unprocessed red meats, may raise risk of heart disease and diabetes
Sadly, even the highly respected Bio Suisse label allows Nitrate as an additive because not enough butchers are willing to work without it. It makes their life just so much easier. Traditional forms of conservation require much more time, work and knowledge. And they say consumers are not willing to pay enough to justify that extra work. On their website, Bio Suisse will tell you that they "decided against their principles to allow Nitrate as an additive".
The ONLY Label out there that does not allow artificial conservatives in meat is Demeter, which practices agriculture according to the bio-dynamic philosophy of Rudolf Steiner.
